Today I stumbled across the Best. Thing. Ever.
A recipe for a chocolate cake that’s virtually fat free. That’s right! Pretty much FAT FREE.
So I made it. And we ate it. And we loved it.
Unlike most fat free-ish things, this cake was big and moist and chocolatey and delicious!
It even got the Will approval who had three (small) slices. Will doesn’t even like cake, usually!

Recipe:
1 2/3 cups of plain flour
1 1/4 cups Stevia Sweetener
2/3 cup Bakers Cocoa
1 1/2 teaspoon baking soda
1 teaspoon salt
1/2 cup apple sauce
1 1/2 cups light natural yogurt
1 tablespoon vanilla extract
I just put all those things in the mixer and mixed, then poured into a lightly greased baking tin and cooked for 30-35 minutes at 180C.
Done!
For the icing I used Weight Watchers Sour Cream, icing sugar and a teaspoon of vanilla extract. I don’t have exact measurements for those, I just kind of did it till it tasted right.
